All three of the Auckland historic houses operated by the New Zealand Historic Places Trust have recipes handwritten by family members – sometimes neatly written and sometimes hastily scribbled into cookbooks or on slips of paper, just as women have done for many years.

 A Slice of Victoria Cake: Recipes from the Kitchens of Alberton, Highwic and Ewelme Cottage contains some gems from these recipe books.  The booklet covers recipes for baking biscuits, scones and cakes, and while they gives us clues about he food consumed in 19th century households, they’re also charmingly written in slightly different language to that used today.

We’ve remained true to the spelling and punctuation of those early cooks and the terms used in describing ingredients and baking methods.  With early ovens not having temperature gauges, it’s over to today’s crafty cook to determine what’s meant by terms like “slow oven”, or “cook quickly”.  Nonetheless suggested adaptations for ingredients are included.

A Slice of Victoria Cake is an attractively designed 22-page, A5 full-colour booklet with lots of colour photos.  Ideal as a gift or just for those who love to experiment with old-fashioned cooking.
